Located across from the train station on Wilsey Square, Blu Sushi will offer in-house dining, takeout and catering.
"I first opened Blu in the Spring of 2015 in Normandy Beach and after two successful summers I decided I wanted to expand up north," said owner Robert Howarth, aka Robbie Wasabi. "My brother and his family live in Ridgewood so I’m there a lot and I also live about 20 minutes away."
A lot of his customers were at the shore seasonally, so he also wanted to offer them a place to get his sushi all year around. "Ridgewood is a great location," he said.
Howarth is involved in almost every aspect of the business except the sushi making, which he leaves to the professionals.
"I oversee all purchasing of our fish from the vendors and I make sure it’s the highest quality, something I’ve maintained from day one. My kitchen and sushi chefs, as well as my manager Alvin, have all been transferred up from the shore," he said, noting his two head sushi chefs Masa and Bill have a combined experience of over 25 years.
Howarth said good sushi starts with buying the best quality fish, knowing exactly where it comes from and making sure it gets from the boat to restaurant in the shortest amount of time.
"I think the number one thing that makes Blu unique is our quality of fish. I have always served something that I would want to eat so I make sure whatever I buy is fresh and delicious," he said. "I also think my chefs do a fantastic job of not only creating delicious dishes but beautifully well-made ones too. We also want you to have as pleasant of a takeout experience as you would having dined in our restaurant, so we make sure your takeout presentation is done just as well."
He said some of the more popular main dishes are the Triple Three Roll and Crazy Sunday roll as well as appetizers such as the Spicy Rock Shrimp, Dancing Scallops, Tuna Fantastic and Philly Cheesesteak Eggrolls.
"We pride ourselves on offering something for everyone in the family whether you’re a sushi lover or not," he said.
The restaurant is open Sunday through Thursday, 11:30 a.m.-10 p.m. and Friday and Saturday, 11:30 a.m.-11 p.m.
